This food preparation is the recipe written for the first option, but you can adapt it to other options if you want.

If you don’t have carb restrictions, you can replace the mashed cauliflower with one of these: Mashed potatoes (these are vegan too), Fluffy rice and Mashed sweet potato. And because the low carb chicken meal prep dish is easy to make, the recipe is flexible.

Healthy Keto Chicken Salad

Add different vegetables or swap for different ones. Here are some ideas: Yellow squash, carrots, green beans, broccoli, corn and snap peas.

If you don’t want to eat veggies, you can substitute the delicious Greek salad made with lettuce, tomato, cucumber, olives and delicious tzatziki sauce. Or you can also serve it with zucchini noodles.

You can even substitute chicken breasts. You can try: chicken thighs, salmon fillet, tofu and pork.

Since we cut the chicken breasts in half, they are thinner and cook faster. This is my favorite method since if you look for whole chicken breasts, the thickness will make the outside hard on the inside before it is cooked. While reheating, microwave your meal prep dish with a damp paper towel over the base to keep the chicken moist.

The chicken can be cooked up to four days ahead of time. Be sure to store chicken in an airtight container to ensure freshness. Before storing in the refrigerator, let the chicken cool down to prevent condensation. Be sure to keep the food in the refrigerator until you are ready to eat it.

I like to use glass containers when it comes to storing my food prep recipes because glass is easier to clean than plastic because it doesn’t stain and can be washed safely at high temperatures.

Unlike my original recipe of using cooked pasta or marinara sauce for a quick-to-get-meal-on-the-table kind of day, this recipe uses tomato sauce made from scratch. We’re just adding five more minutes of cooking time to this recipe, and of course, it’s worth it if you get a nice, rich sauce that soaks into your chicken breasts to make it delicious and flavorful.

The whole secret is in the five main ingredients in this soup. Better than the store bought stuff!

The recipe includes grilling the cheese at the end for a nice crisp, golden and flaky cheese result. If you don’t want to turn on your oven, you can throw a lid on your pan and allow the cheese to melt that way while you melt it on the stove. I prefer broiling (our grilling for Aussies), because you can’t beat the result of crispy melted mozzarella cheese!
